Here’s an easy recipe for making bua loy, a sweet dessert that will always be in my heart’s way that everyone likes to eat. Fragrant with sweet coconut milk. Chewy lotus flour is easy to make. If you don’t believe it, come and try it.

Ingredients: Bua Loi Khai Wan     

1. 1 cup glutinous rice flour     

2. 1/4 cup water     

3. Steamed taro (or purple food coloring)     

4. Steamed pumpkin (or yellow food coloring)     

5. Concentrated pandan juice (or green food coloring)     

6. 1 cup coconut milk     

7. 1 cup sugar     

8. 1 teaspoon of salt     

9. Chicken eggs

How to make Bua Loi Khai Wan
1. Divide the dough into 3 parts as follows.         •  

         •  Part 1: Mix flour with water and steamed taro.

         •  Part 2: Knead the dough with water and steamed pumpkin.

         •  Part 3: Knead the dough with pandan juice. Knead until mixed together. Form into small balls and then coat with a thin layer of glutinous rice flour.    

2. Put coconut milk in a pot. Add sugar and salt. Stir until dissolved. Bring to a boil. When boiling, turn off the heat. Scoop into prepared cups     .

3. Boil water in a pot until boiling. Boil the lotus, one color at a time, until it floats up. Then scoop up and drain the water and put into a cup. Scoop in the prepared coconut milk.    

4. Crack eggs into a cup and slowly pour into the pot of coconut milk. Wait until the eggs are cooked to your liking. Then scoop it out and put it in a bua loy cup and it’s ready to serve.
