How to Make Delicious Red Chicken

The only thing that is special is the type of sugar used which is  Melacca sugar . The use of melaka sugar makes the sambal sauce sweeter than sambal with regular white sugar . It’s really like this sambal kampung festival side dish that tastes like Red Cooked Chicken . You should try. Please refer to the  tips section  for ways to cook sambal tumis deliciously.

The 2nd special ingredient is  curry leaves . The use of curry leaves while frying can add a more  fragrant and appetizing taste and aroma . But don’t worry if there are no curry leaves, it can be ignored. It’s just that the taste will be slightly different from the version that Che Nom cooks today.

Ingredients:

  • 1 chicken, cut into the pieces you like
  • turmeric powder
  • a pinch of salt
  • 1 sprig of curry leaves
  • 1/2 cup tamarind water
  • 3-4 tablespoons of chili sauce
  • 1 large onion, cut into rounds
  • Estimated 1 piece of melaka sugar
  • 2 tablespoons oyster sauce
  • Ingredients for fine grinding:
    • 2 large onions
    • 2 inches of ginger
    • 6-8 shallots
    • 8-10 garlic cloves
    • 2 lemongrass sticks, thinly sliced
    • 15-20 dried chilies, remove the seeds and boil

How to Prepare:

  1. Clean the chicken and mix with turmeric powder and salt. Heat oil and fry half-cooked chicken. Remove and set aside.
  2. In the same oil, stir-fry curry leaves followed by finely ground ingredients together until the oil breaks.
  3. Add the tamarind water, followed by the fried chicken.
  4. Add chilli sauce, oyster sauce and melaka sugar. Add melaka sugar little by little and try the sweetness according to your taste. Add a little water if the sambal sauce is too dry. Continue cooking for 5-10 minutes. Season with salt to taste.
  5. Before lifting, add a large onion cut into rounds. Stir for a while.
