Stir-fried Riceberry with Tilapia

Let’s continue with the healthy fried rice menu and the riceberry rice menu with tilapia stir-fry. Catch tilapia, cut into pieces and fry until cooked. Then stir fry it with riceberry, carrots, broccoli and pumpkin, sprinkle with cashew nuts and sunflower seeds.

Ingredients for Stir-Fried Riceberry with Tilapia

  • Tilapia (diced) 100 grams
  • A little coarse salt
  • A little ground pepper
  • Ready-made crispy fried dough
  • Vegetable oil (for frying)
  • 1 teaspoon minced garlic
  • 1+1/2 teaspoon olive oil
  • Carrot (diced) 1 tablespoon
  • Broccoli (diced) 1 tablespoon
  • Pumpkin (diced) 1 tablespoon
  • 3/4 cup cooked riceberry
  • 2 teaspoons shiitake mushroom sauce
  • 1/2 teaspoon soy sauce
  • 1/4 teaspoon granulated sugar
  • 6-7 fried cashew nuts
  • 1 teaspoon toasted sunflower seeds
  • Fish sauce mixed with lime juice and bird’s eye chilli

How to make fried riceberry with tilapia

     1. Sprinkle salt and pepper over the tilapia and then coat in enough crispy fried flour. Fry in vegetable oil over medium heat. Fry until golden brown. Scoop up and let the oil drain and prepare.
     2. Fry the garlic with olive oil until golden brown and fragrant. Add carrots, broccoli, pumpkin and riceberry and stir gently to combine.
     3. Season with shiitake mushroom sauce and soy sauce. White, granulated sugar, salt and ground pepper. Stir to combine
     . 4. Add the fried fish and gently fold together. Transfer to a serving plate. Sprinkle with cashew nuts and sunflower seeds. Served with fish sauce mixed with lime juice and chilli.
