Ingredients: Sai Oua
- 1.5 kilograms of pork with mashed potatoes
- Spring onions, coriander mixed together, 1 cup
- 2 tablespoons chopped kaffir lime leaves
- 1 tablespoon turmeric powder
- 4 tablespoons red curry paste
- 1 teaspoon brown sugar
- 2 tablespoons soy sauce
- 3 tablespoons fish sauce
- 3 tablespoons oyster sauce
- Soft filling for stuffing Sai Oua
Ingredients for chili paste for making Sai Oua
- 2 large dried chilies, soaked in water
- Dried bird’s eye chilies, about 1 cup total, or as desired
- 10 cloves of garlic
- 6 shallots
- 3 stalks of lemongrass
- 1 tablespoon kaffir lime skin
- 3 tablespoons galangal
- 2 tablespoons chopped turmeric
- 3 tablespoons coriander root
- 1 teaspoon shrimp paste
- Coriander, roasted and pounded cumin, 3 teaspoons

Sai Oua is the easiest to make. If there is a machine ready It’s better to start with ground pork. It’s better to stick to the fat. Or if you don’t like it, you can use pure meat. But when grilling, it will be matte and not soft.
How to make chili paste for Sai Oua
- Pound the chilies with salt until fine.
- Add galangal and pound until fine. Follow with lemongrass, coriander roots, garlic and shallots, pounded until fine.
- Add the kaffir lime skin and pound until combined.
- Add shrimp paste and turmeric.
- Finally, add the coriander seeds and roasted cumin, pounding until combined.
How to make Sai Oua
