Ingredients for sweet potato apple pie
- Wheat flour: 300 gr
- Almond powder: 15 gr
- Sweet potatoes: 2 tubers
- Apples: 2 fruits
- Vanilla: 1 teaspoon
- Unsalted butter: 220 gr
- Cane sugar: 40 gr
- Condensed milk: 30 ml
- Rum: 1/3 teaspoon (optional is fine)
- Salt

The process of making sweet potato apple cake
- Step 1: Mix flour and butter
+ Cut unsalted butter into small pieces and add it to the dry flour mixture, mixing and dipping the butter into small pieces.
+ Stir salt into cold water and then slowly pour into cake flour mixture. Mix well until a smooth, uniform dough forms.
- Step 2: Incubate the dough for the first time
+ Put the flour mixture into plastic wrap, wrap it in a rectangular shape, then put it in the refrigerator for about 1 hour.
+ Sprinkle a little flour on the cutting board, remove the dough from the wrap, then use a rolling pin to roll the dough out into a rectangular shape. Next, fold the two ends in turn, then roll them thin again. Finally, fold the two ends and put them in plastic wrap and wrap. Place in the refrigerator for about 1 hour.
- Step 3: Prepare sweet potatoes
+ Wash sweet potatoes with water and drain. Next, peel the potato skin and cut the sweet potato into slices about 1 – 2cm thick.
+ Put the sweet potatoes in the pot, pour water across the potatoes. Heat over medium heat, then boil the potatoes for 15 – 20 minutes until the potatoes are soft, then turn off the heat, drain off the water, take out the potatoes, drain them and put them in a bowl.
+ After boiling the potatoes, use a fork to mash the sweet potatoes until smooth. Next, add sugar, condensed milk, vanilla, and potato mixture and use a spatula to mix well.
+ Then add almond powder, rum, then continue using a flat spatula to spread and mix well until the mixture blends together. Use plastic wrap to cover the sweet potatoes to ferment.
- Step 4: Incubate the dough a second time
+ Similar to above, take the dough out of the refrigerator and remove the wrap.
+ Cover the cutting board with a layer of flour so that the dough doesn’t stick when rolling. Use a rolling pin to roll it out thinly, then fold the two ends of the dough in turn. Continue to roll out the apple cake thinly and then fold the cake together. Wrap in plastic wrap, then put back in the refrigerator for about 1 hour.
- Step 5: Prepare apples and apple slugs with sugar
+ Wash the apples, drain them, cut them into segments, then peel away the seeds and peel, put the apples in a bowl, mix well with a little lemon juice.
+ Put water and cane sugar in a pot and stir over low heat until the sugar dissolves. Then heat until the sugar boils, large bubbles appear and the sugar begins to turn the color of cockroach wings, then add unsalted butter and melt it all. Next, put the apples in the pot and stir well. Add a little vanilla, then continue slicing for 10 minutes so the apples absorb the sugar evenly. When you see the apples begin to soften, turn off the stove.
- Step 6: Roll and arrange apple pie crust
Divide the cake into 2 parts.
+ For the 1st part, sprinkle a little flour and then use a rolling pin to roll out the dough. Slowly place the cake onto the apple cake mold, gently press the cake close to the mold, and cut off the excess. Wrap the cake in plastic wrap and put it in the freezer to secure the cake.
+ The remaining dough is also rolled out thinly. Use a knife to cut the cake into strips about 1 – 2cm apart. Finally, put the cake in the freezer to solidify the dough fibers.

- Step 7: Bake the cake
+ Put the sweet potato mixture into the cake mold and spread evenly. Next, arrange each apple slice with sugar sauce on top. Then, arrange each cut dough strand in a checkerboard shape, cutting off the excess.

+ For the edge of the cake, use 2 strands of dough tied together like a braid and then place it along the circular edge of the cake mold.
+ Preheat the oven at 200 degrees Celsius for 20 minutes. Then put the cake in the oven and bake at 180 degrees Celsius for about 40 minutes until the cake is cooked and golden brown.
Sweet potato apple cake has a fragrant caramel smell, the crust is golden and crispy. Inside, the sweet and crispy apple filling combined with the sweet potato filling creates a flavor that is both strange and attractive.
