Taiwanese moon cake recipe

Shell powder:

  • 250gr all-purpose flour
  • 25gr cooking oil
  • 25g unsalted butter
  • 45g powdered sugar
  • 90ml filtered water
  • 1/2 tsp salt

Mix everything into a dough, let the dough rest for 30 minutes, after 30 minutes the dough will be smooth. The portion of peel powder I make is about 45gr

Oil powder part:

  • 130gr all-purpose flour
  • 30gr cooking oil
  • 30g unsalted butter

Mix the ingredients well. The portion of oil powder I made is about 18g

Green bean filling:

  • 150gr green beans
  • 60g sugar
  • 50gr cooking oil
  • 10g cornstarch
  • 1 spoon of water

+ Soak green beans for 2-4 hours, add 200ml of water, then cook and puree.

+ Mix all remaining ingredients above

+ Boil the above mixture over low heat, stirring well so that the green beans do not stick to the pan and slowly dry. Remember to turn often so the green beans don’t burn! I slug for about 30 minutes. The green bean filling is about 30g

I used 11 salted eggs for the recipe of 11 cakes. Salted eggs are deodorized with alcohol and then baked at 180 degrees for 3 minutes in an oil-free fryer.

Once you have finished shaping, preheat the oil-free fryer to 180 degrees for 10 minutes.

Bake:

+ 1st time: 160 degrees 15 minutes. Take it out and brush egg on top and sprinkle some sesame on the cake

+ Second time: 180 degrees 7 minutes.

After baking, the cake will be hard and crispy, so leave it overnight and the crust will be softer.
